Lodi Sausage Co. processes every Thursday by appointment only to ensure we have room and time to correctly process your animal. After the hog is harvested and cooled, it is then processed on the Monday after according to the customer’s specifications. All the cuts and smoking products are then double wrapped to preserve freshness. The wrapped pork is then placed into our blast freezer until pickup.
